The honey mustard dressing I make for pasta salad is:

1 part Dijon mustard
1 part honey
5 parts mayo
Salt & pepper
Lime juice

Mix the mustard, honey & mayo together, mix in the salt & pepper. It'll be a little rich, so I just stir in enough lime juice until it tastes good.

Sorry, not very healthy.

Mashed! Peel and boil in salted water until soft, and drain thoroughly. Break up by crushing with a fork, then add a dollop of butter, and a shedload of butter. Then mash well. Maybe add a splosh of milk. Should be a nice side dish as it is, but it's up to you if you want to also mix in some chopped parsley, or a dab of mustard or horseradish.
