Its a pretty common question, and I think it could all be put into one thread.

Anyway... I have a LOT of baby carrots in the house and I need to use them all up by this weekend or they'll go bad on me.  We've got more than enough for just snacking on them. I need your carrot recipes!

Carrot bread is delicious and you can freeze it. Also wrap it in cellophane with a ribbon and give it to co-workers you think are OK.

My problem with carrot cake/bread is that all the recipes ask for grated carrots, and baby carrots are hell to grate because of their size.

Does it work if I put them in the blender instead?

I can't see how using a food processor or something similar very carefully wouldn't do the same job. Just don't BLEND them. Or do, and have carrot smoothies.

First of all, pickle them (http://www.davidlebovitz.com/archives/2008/11/easy_pickled_carrots.html). Technically this won't consume them, but it will give you a month or so to eat them. And besides, pickled carrots are delicious.

Second, let me be preachy for a moment and suggest not buying 'baby' carrots in the future. As you now know, they're hard to chop up. To make matters worse, they're often dry, chalky, and split because they're so desiccated. Whole carrots are easy to cut up, come with carrot greens (which taste, unsurprisingly, like carrots and can be used in lieu of carrots in many dishes), and usually cost no more than baby carrots.

Man, I don't think I've ever had a bag of dry baby carrots.  I'm not sure where you get yours, Iron Colonel, but your experience seems to be the exact opposite of mine.

I second the "don't buy baby carrots". We used to buy them by the bagful, because Chinko likes carrot sticks with his lunch instead of chips. But it's the work of a minute to peel and slice one into sticks. They taste better in everything.  Baby carrots start off fine, but after a couple days, they get chalky. And they just don't taste as carroty as the big ones.

Anyways, I made a ginger carrot salad dressing the other day. That tasted pretty good, but I can't recall what I put in it, other than carrots and ginger of course.  I've seen recipes for curried carrot soup online that look pretty good. We just don't like carrots enough for me to try it.

Other than carrot sticks, I like to peel and roast carrots like I do pretty much every vegetable that crosses my path. I did some roasted carrots and beets the other day that were pretty kick ass. I also cut them up into soups and stews. If I make a potroast, I cook potatoes and carrots with it. When I make spaghetti sauce, I start with a mire poix, which is carrots, onions and celery cooked together. Same when I make tomato soup. And of course, they are good sliced over a salad.

Cut off a slice at the top, hollow out the inside with a spoon (those are the huge ones, right?) and fill them with a mix of ground pork/beef, diced mushrooms, diced peppers, some diced chili pepper, the pulp you just spooned out of them and diced mozzarella that you season with pepper, salt, oregano, rosemary and a hint of balsamico. Put the lid back on, loosely wrap them in tinfoil and roast them in the oven. You can cut some potatoes into wedges, mix them with the rest of the tomato pulp, some olive oil and some ground dried chilies and put them on the same baking tray, if there's room, as a side dish.

My mom tells me you can also hollow them out, cut the skin part into strips, wrap those strips around feta cheese sticks and pickle these packages. I wouldn't know, because I hate Feta cheese. The marinade sounds easy enough. It's 1 cup white wine vinegar, 5 cloves of garlic (sliced), 3 bay leaves, a chili (sliced) if you want and a spoonful of Herbes de Provence. Stack tomato/feta things into jars, bring vinegar and spices to a boil and pour on top, close jar.

I'll second the suggestion for some sort of tomato soup. Gazpacho is a great summer dish, and it's pretty easy to make. Just chop, blend and chill.

By the way, the carrots ended up being used in a habanero sauce. Our habanero plant was full of bright orange habaneros and they made an awesome salsa. But damn, those things are toxic to cook, I was smart enough to use gloves this time (last time i scratched my balls the day after.... oh the pain....) but while washing and cleaning them the air got pretty hard to breathe.

Caprese salad is my favorite salad this time of year. It's just tomato, basil and a good mozzarella cheese.  I chop everything together, then drizzle with good balsamic vinegar and olive oil, then sprinkle with salt and pepper.  We had that for dinner a couple nights ago with some foccacia that I made.

Yeah, I just made some really watery salsa. Next year I'll grow some Roma tomatoes.

Try slicing the tomatoes first and then salting them. This will help to dry them out a little. Then you can make salsa; it won't be perfect, but it won't be tomatoes in water, either.

I've got ridiculous amounts of Bok Choy in my house right now as a result of asking my room mate to pick me up some while she was in Chinatown and not specifying that I didn't want all the Bok Choy. What should I do? I am fresh out of creative ways to make it disappear.

If you add big amounts of melted cheese to those mushrooms and eat them with some sort of bread (tortillas in my case) you cant go wrong.

That's only a week's supply at my house. We eat lots of garlic.  Just chop it up and throw it everything you eat for the next month.  Or you can make roasted garlic spread. Take however many garlic cloves you want to roast, with the paper still on them, and drizzle them in olive oil and wrap in foil. Put the whole thing in the oven for about 20 minutes. Let it cool. Then squeeze the garlic out of the paper into a bowl or whatever. It's great smeared on bread, or stirred into a sauce. I made baba ganoush yesterday and I added roasted garlic to it. It was excellent.

So what is good with chives? Because I've got a shit-ton of chives (a shit-ton is about one bucketful of the stuff.)

I've already made plenty of mashed potatoes and baked potato dishes. We also made some cream cheese dip and put chives in there.

I have no idea what else these are good for. Anyone?

I have an uncle that works in a fine dining restaurant on the other side of the border (a Mexican working in a restaurant! whoah). Once in a while he brings us this kind of stuff. Usually its nicer stuff, but it was a shitload of chives this time for some reason.

So some dudes did a bit of wild goat shooting in Coburg and now I have a rack of goat. What do I do with goat? Just season it and throw it on the bbq, or does it need to be cooked for a very long time or what? I've only ever really eaten it in a curry.

Goat can be hard, because it has such a strong, gamey flavour, especially wild ones. Used well though, it can turn out incredible. If you want to make a roast or throw it on the barbecue, you should definitely marinate it in buttermilk overnight to soften the flavour.

Goat meat that is for sale is usually from goats that are raised for the express purpose of being eaten, and are fed accordingly. A wild goat will have a much stronger flavour. I once had a stew made with wild goat from southern France, where they feed mainly on young thyme. It was incredible, the meat was imbued with thyme flavour, but you don't know what yours has been feeding on, so it'll be better to make something that adds some strong flavours, to complement and balance the strong aroma of the goat. That's why you usually eat goat in curries: The goats in the carribbean and india feed on twigs, newspapers and old car tires.

The best goat I ever had, though, was incidentally rack, in Okinawa (where they also do raw goat). I don't know the exact ingredients, but it was marinated in buttermilk for a day and a night, then put in low-proof awamori on the next day. I guess any other clear, not too aromatic spirit will do, the alcohol is just to make the meat more tender.

Then, an hour or two before preparing, they put it in a plastic bag with a spice marinade that I don't know the exact components of, but it had lemon juice, some of the awamori, pepper, a bit of chili, some honey and cilantro. That's what I know, there was probably more spices in it.

Then they put it on a barbecue with a lid and basically half-smoked it, brushing it with the marinade every once in a while.

Mashed! Peel and boil in salted water until soft, and drain thoroughly. Break up by crushing with a fork, then add a dollop of butter, and a shedload of butter. Then mash well. Maybe add a splosh of milk. Should be a nice side dish as it is, but it's up to you if you want to also mix in some chopped parsley, or a dab of mustard or horseradish.

Finally got around to it before they went off. The mash worked out pretty well, I threw in a couple of carrots, butter, salt and pepper, a dash of milk, some cheddar and then had sausages and fried onions on top. I'd forgotten the suggestions for extra flavour so on the second helping added in some whole grain mustard (and in retrospect, garlic would have been a good addition). I carried on heating after mashing it up because turnips can hold on to a bit more water and can end up a bit "thin". Would try again.

I've had neeps before, this was just my first time preparing them.

You can put baby spinach in anything. Put it in an omelette, make a salad with blue cheese (which you can also put in the omelette) and cranberries and walnuts, make some pasta, sautee some of that baby spinach (more than you think you'll want, it cooks down and wilts pretty small- like a large handful per person), and toss that shit with pesto. Delicious. Put some in ramen with an egg (just crack it in right after you take it off the heat and swirl it around a bit- the hot broth will cook it) and some sriracha. Make another salad with avocado this time, and a hard-boiled egg and tomato, and a little more of that blue cheese. Make a quiche, or a spinach pie! If you do smoothies or juice you could toss a handful in there. I know there are some "sneaky" recipes for like brownies and stuff with spinach in them but that seems weird to me. I go through one of those boxes of pre-washed spinach a week and I do seriously have it in about every meal. I'll let you know if I think of anything else.

When I have a ton of spinach I make a "pesto" that goes really well on pasta, meat, or in a sandwich. Just throw walnuts, parmesan, and a ton of spinach in a food processor and gradually add olive oil to it.

Thanks for the advice guys! I unfortunately don't have a lot in the way of food processors or blenders, but I think I'll chop some up and throw it in the peanut sauce I'm making tomorrow.

And definitely salads. I had an idea I'm gonna try this weekend:

-Grilled chicken
-romaine
-Two or three big ass fucking handfuls of baby spinach
-almonds
-purple grapes
-honey mustard

I know honey mustard can be high in sugar and fat, but honestly, I just love it to much to take it out of my diet.

The honey mustard dressing I make for pasta salad is:

1 part Dijon mustard
1 part honey
5 parts mayo
Salt & pepper
Lime juice

Mix the mustard, honey & mayo together, mix in the salt & pepper. It'll be a little rich, so I just stir in enough lime juice until it tastes good.

Sorry, not very healthy.

I've got a long coil of vinna sausage that Mr. Rummy has deemed too fatty to grill and eat normally, anyone have any suggestions with what to do with it? They usually cook soft not firm like regular sausage so whacking them in a stew seems like it would be gross (and all the fat would be in it anyway so extra gross.)

It's sausages made with wine if that's any help, google keeps telling me I actually have vienna sausages because google is dumb.

If you throw it in a pot with some water and/or beer and boil it for 5-10 minutes, a lot of fat should cook out and float to the surface, which is gross, but my parents used to do that with bratwurst when they were in a healthy-eating phase, and it works pretty well! Then you can try grilling it or frying it per that Wikipedia page.

ETA: oohh, since it's wine sausage, probably don't do beer in the pot. But water should do fine!

You could open it and use it like mince, you'd just have to drain off some of the fat when you fry it before freezing. Bolognese with a good sausage filling instead of regular mince is terrific.

When you need to ramp up a dish, take one or two out, slice thinly and fry from mostly frozen - they go crispy without burning. Use as a garnish on any dish , those things go with anything.

Season with cinnamon, chili powder, a little cayenne pepper, a little brown sugar, and salt and pepper to taste.
Once they're cooked through and tender, add a drained can of black beans to the pan, and heat it all the way through.
Next add a whole ton of kale. It cooks down a lot, so add like twice as much as you think you want. Mix it all together, let the kale cook down for like, five minutes. Then spoon some into a flour tortilla with some avocado slices, sour cream, and a little grated cheddar and roll it up into a burrito. With the black beans and kale, one sweet potato usually gives us about four hearty burritos.

Alternately, bake it in the oven just like a regular potato- poke some holes in the skin, brush it with olive oil, sprinkle with sea salt, and put it in the oven for an hour (or microwave them for ten minutes first and put them in the oven for fifteen minutes after.) Cut them open when they're done, fluff up the insides, and add some gorgonzola, dried cranberries, and fresh spinach. Sooo good.

There is a lighter colored layer of flesh just inside the peel, I figure it should be safe to eat as you can eat potatoes whole, but does it make a difference in boiling/freezing?

If you are eating them fresh, leave the skin on. Like with potatoes, it is where most of the good stuff is.

Freezing, though - the skin goes black and slimy really easy unless you have access to a quick freeze. It isn't bad for you - but the texture really sucks.

Try to peel them as fine as possible before you blanch them.

Satay Sauce:

2 cups salted peanuts, crushed.
1 tablespoon sweet soy sauce
1 tablespoon brown sugar
1 teaspoon dried chilli flakes
1 small red chilli - chopped as fine as possible
1 small onion - also chopped as fine as possible
1 clove garlic - crushed
2 inch length of lemon grass - crushed (optional)
1 inch of root ginger - peeled and crushed
1 can coconut milk
peanut oil


Heat the oil in a wok and soften the garlic, onion and chilli over medium heat.
Add the sugar and stir until slightly caramelised. Add the soy sauce and peanuts.
Add a little coconut milk at a time until you achieve your desired consistency. Make sure to shake the can well before opening!

Keeps for about a week in the fridge, or you can hot can it for later (still fine after a year) if you want to make a larger batch.

We have tried different textures - found it tastes nicest as a mostly smooth texture, so we'll blitz it before putting it on the table/in jars.

Missus reminded me of this one. Again, it keeps for a week or so in the fridge.

Ghanian Peanut Sauce.

1 onion - finely chopped
2-3 cloves of garlic - crushed
1 jalapeno pepper - deseeded and finely chopped
500ml vegetable stock
1 red or green pepper and a small courgette - finely chopped
2 cups finely crushed peanuts
1 good slice of butter
1 450g tin of chopped tomatoes
1 450g tin of black beans
1 tsp ground ginger
1 tsp paprika
Chilli powder - to taste
Fresh coriander or mint
Oil, for frying

Fry the onions and jalapeno pepper in oil until the onion is translucent, then add the garlic and continue to cook for another two minutes. Stir in the peppers and  courgettes and add the vegetable stock.
Add the crushed peanuts and butter. Stir until the butter has melted but not started to go brown.
Add the chopped tomatoes, rinsed beans and spices.
Simmer for five minutes or so.

Serve the sauce over warm couscous, with a little chopped fresh coriander or mint.

You can use pretty much any tinned beans. I prefer chick peas. As you are using salted peanuts, you may want to drop in a teaspoon or so of brown sugar along with the garlic.

It goes nicely with cold meats too, especially cold roast chicken.

Honestly, I would just experiment with it. Feta has a nice saltiness to it, so try using a little here and there as a substitute for other salted ingredients in your cooking. That's pretty much how it's used in about 75% of the recipes at that link, anyway.

It's also good in an omelette or in slices on crusty bread with fresh tomato slices and olives on the side. You can also wrap slices of it in phyllo pastry, fry it in oil, and drizzle honey over it. This is super delicious and easy, especially if you buy the pastry pre-made.

Take a wheel of brie and cut it horizontally.  Spread the jam in between the two brie disks and finish with some ground black pepper on top.  Wrap in puff pastry and bake at 350 for half an hour.  Serve with anything dippable.

If you have left over brie in the morning, or any other soft, spreadable cheese like Camembert,  or just cream cheese, spread cheese on one slice of bread, jam on another, dredge in beaten eggs and proceed as you would in making french toast.  except now you've made stuffed french toast.

If cheese intimidates you, you can also just make stuffed french toast with the jam, maybe some fruit, cooked bacon, etc.

so it gets an A+ in my book
